Mandarin tea cake

This mandarin Cake can be easily and quickly prepared without the use of a mixer. This cake is soft, tender, and packed with the refreshing taste of fresh mandarins. It's a perfect everyday cake that is easy to make and improves in flavour over time.

Ingredients
  

cake
  • 250 grams self raising flour
  • 200 grams sugar
  • 3 large eggs
  • 100 ml milk
  • 100 grams melted butter
  • Juice of 2 mandarins
icing
  • 100 grams icing sugar
  • Juice of 1 mandarin

Method
 

  1. Add all cake ingredients to bowl and mix until a smooth batter is formed
  2. Grease loaf pan and spoon in cake batter
  3. Bake at 180c/355f for 35 mins
  4. Mix icing ingredients together in bowl
  5. Drizzle icing on cake when cake is still warm
