Mandarin tea cake
This mandarin Cake can be easily and quickly prepared without the use of a mixer This cake is soft, tender, and packed with the refreshing taste of fresh mandarins. - 250 grams self raising flour
- 200 grams sugar
- 3 large eggs
- 100 ml milk
- 100 grams melted butter
- Juice of 2 mandarins
icing
- 100 grams icing sugar
- Juice of 1 mandarin
Add eggs to a large mixing bowl and lightly beat to break up yolks
Mix in flour, sugar, eggs, milk and butter until a smooth batter is formed
Add mandarin juice and zest to batter and combine
Grease loaf pan and spoon in cake batter, bake at 180c/355f for 35 mins
Mix icing ingredients together in bowl
Drizzle icing on cake when it is hot out of the oven
