Tips & Qs

For optimal results, I recommend measuring ingredients by weight using a food scale, although measuring by volume is also acceptable and commonly used.

Can I zest the mandarin without a zesting tool?

If you don’t have a special tool, the simplest method to zest is to use a vegetable peeler. Although it’s also possible to do it with a knife.

Can I use oil instead of butter?

Yes. Whether you use olive, canola, vegetable, or coconut oil, substituting butter for oil is a great option.

Use 75ml of oil for this recipe instead of butter.

How to store

The mandarin cake can be kept fresh at room temperature for a maximum of 5 days if stored in an airtight container.
