This mandarin cake can be easily and quickly prepared without the use of a mixer. It has a fluffy texture and is packed with fresh mandarin goodness. Best of all, it really improves in flavour over time.

- 250 grams self raising flour
- 200 grams sugar
- 3 large eggs
- 100 ml milk
- 100 grams melted butter
- Juice of 2 mandarins
Icing
- 100 grams icing sugar
- Juice of 1 mandarin
Equipment

- Kitchen scales
- Loaf pan
Quick run through
- Add eggs to a large mixing bowl and lightly beat to break up yolks
- Mix in flour, sugar, eggs, milk and butter until a smooth batter is formed
- Add mandarin juice and zest to batter and combine
- Grease loaf pan and spoon in cake batter, bake at 180c/355f for 35 mins
- Mix icing ingredients together in bowl
- Drizzle icing on cake when it is hot out of the oven
Tips & Qs
For optimal results, I recommend measuring ingredients by weight using a food scale, although measuring by volume is also acceptable and commonly used.
Don’t be a sourpuss, use fresh mandarins! Fresh citrus is the key to making your taste buds do the happy dance.
Can I zest the mandarin without a zesting tool?
If you don’t have a special tool, the simplest method to zest is to use a vegetable peeler. Although it’s possible to do it with a knife, you have to be very gentle.
Can I use oil instead of butter?
Yes. Whether you use olive, canola, vegetable, or coconut oil, substituting butter for oil is a great option.
Use 75ml of oil for this recipe instead of butter.
How to store
The mandarin cake can be kept fresh at room temperature for a maximum of 5 days if stored in an airtight container.
