Another simple tea cake recipe for you! Give yourself a couple of minutes to throw the ingredients together to create a fluffy, moist tea cake, gently scented and flavoured with a fresh chamomile taste scattered with soft apple chunks.

Tips
Soak the chamomile tea bags for at least 5 minutes and let the tea cool down.
Make your tea while you’re getting your ingredients together. Chamomile tea takes a few minutes to properly brew in hot water, so make sure you give yourself enough time to brew and cool down your tea before you start mixing the batter together- you don’t want to add boiling hot water to your cake batter.
Unlike green or black teas, chamomile tea doesn’t turn bitter if left to brew/steep in the water for too long, so it’s fine to add your tea bags or loose leaf to the water and leave it in while it cools.
You can also use fresh chamomile flowers for this recipe! Chamomile tea is just chamomile flowers! If you have access to some, it certainly adds a fresh taste to the cake to use freshly picked flowers. Simply use the heads of the chamomile flowers – the more petals the stronger the flavour. Add the flower heads to some boiling water as you would a normal cup of tea and voila, fresh chamomile tea.

I only have “loose leaf” chamomile tea/ fresh chamomile flowers, how much do I use for this recipe?
I used 3 tea bags for this cake, if you’re using dried loose chamomile tea OR fresh chamomile flowers use:
7-8grams of chamomile tea/flowers
Can I use vanilla essence instead of vanilla extract?
Yes of course. Vanilla extract is a lot stronger and most of the time a tad more expensive than vanilla essence. So you need to adjust the amount added to the batter for the same flavour, by doubling the amount if using vanilla essence.
Use:
2 tsp vanilla essence
Can I use brown sugar instead of white sugar for this recipe?
If you only have brown sugar on hand it’s more than okay to use. Using brown sugar shouldn’t alter the flavour of the cake too heavily, it will be the same amount of sweetness with a slightly more caramelised taste.
Brown sugar is just white sugar soaked in molasses, so the flavour should have an equal amount of sweetness compared to white sugar but with a richer flavour. Light brown sugar has less molasses while dark brown sugar has more, so the type of brown sugar you have on hand will determine the flavours. Keep in mind that brown sugar may change the colour of the cake, it may be darker in colour. Either way, your cake will turn out great!

Ingredients
- 250 grams self raising flour
- 200 grams white sugar
- 3 large eggs
- 100 grams melted butter
- 100 mls hot water (for tea)
- 3 chamomile tea bags
- 3 apples, sliced
Instructions
- Add chamomile tea bags to hot water and leave to cool entirely
- Add tea to mixing bowl along with all other cake ingredients and mix until mixture is smooth
- Grease loaf pan and spoon in cake batter
- Bake at 180c/355f for 35 mins or until cake is golden brown and cooked through
